Recipe of the Week

It’s still (unfortunately) winter. It’s still cold. You still have another few weeks until you can go home for Easter, eat loads of chocolate, and ignore the fact that you are now officially “adult-ing”. Your student loan is probably running a little low too, huh? Well, I have an easy weekend breakfast for you, which uses cheap ingredients, and could make your post-Saturday-lie-in life (before the realisation that you have three essays to write kicks in) a little more bearable. Baked oatmeal, for anyone who hasn’t heard of it, is somewhere between a muffin and cookie dough in texture. And this one tastes like apple pie. But unlike buying a muffin, or cookie dough, or apple pie, it’s actually good for your physique and your bank balance. Also, once you’ve mixed it up and heated the oven this pretty much looks after itself. Which means that unless you really screw up, and manage to set the kitchen on fire, you can convince your flatmates that you’re also a great cook…

Ingredients:

•1 medium apple

•1/2 cup porridge oats

•1/2 cup milk (you can use any plant based milk, or cow’s milk)

•Cinnamon, to taste

•Ginger, to taste (approximately 1/4 of the amount of cinnamon)

•1/4tsp baking powder

•1/4tsp baking soda

OPTIONAL: honey (add 1-2tsp to the mix itself with all the other ingredients, or drizzle it on top before baking); 1tbsp nut butter of choice, to add once removed from the oven

Method:

•Preheat the oven to 190*c, and grease an ovenproof dish (a deep dish works best).

•Chop the apple into chunks, reserving three thin slices to top.

•In a bowl mix together all of the ingredients, and then pour into the baking dish. Top with the apple you sliced earlier and then put to one side, a sprinkle of cinnamon, and also some honey if you like.

•Place into the oven for 25 minutes, until crisp on the top. Remove from the oven, and allow to cool slightly (give it 5 minutes-ish- just so you don’t burn your mouth and then blame me), then dig in…
